The flat oyster also known as Galician oyster from the National Park of the Atlantic Islands of Galicia, is cultivated in rafts in a similar way to mussels. They are highly regarded due to the quality of the waters of the Galician coasts bathed by the Atlantic where they are constantly renewed and oxygenated, hence its characteristic taste of the sea. There are different types in the markets, being the flat oyster the most recognized.
 
They are usually eaten alive, with a few drops of lemon, being one of the products that have always been associated with sophistication and luxury.
